"What Lake
Side Inn Bed & Breakfast has to offer"
Recently Fred an I had the opportunity to spend the
night at the Lake Side Inn Bed and Breakfast in Maple Sprints. It was
a delightful experience that I would highly recommend to anyone who
wanted to get away. It would be a great gift for a spouse, parent, or
friend.
Chef
Wade Royal cooked a breakfast that was out of this world. Each food
was more delicious than the last and, thankfully, we came away with
the recipes.
It
began with fresh fruit, yogurt, coffee, a selection of teas and many
cereal choices, along with Cinnamon Chip Scones with Cinnamon Glaze,
Blueberry Scones with Lemon Glaze and Morning Glory Muffins. We then
had the Country Brunch Casserole, Cheese Potatoes and sausage. Next,
Stuffed French Toast was served topped with Blueberry Reduction. Fred
sampled and enjoyed the Quiche. Every dish was beautifully garnished.
Chef
Royal’s motto is “Never trust a skinny cook.”
“Many
friends gave me recipes when we first opened in 1988,” says Rosemary
Stage, innkeeper. She and her husband, Paul, share their home with
the many guests who come through their door.
The
huge, elegant Dutch colonial is most likely the largest home in Maple
Sprints. It is located on Chautauqua Avenue, which was once a part of
the old trolley track that ran along Chautauqua Lake. The impressive
grounds are bordered on the street side by a low stone wall that was
probably built around 1925 when the house was constructed, since it
shows up in very old pictures the family possesses. The same
stonework found in the wall can be seen in the many porches and patios
connected to the house.
The
house, which was built for a summer home, overlooks the lake. Outside
the back door is a gravity-fed fountain with a sitting area. A
carriage house positioned behind the main house, which housed the
caretaker in the upstairs living quarters, contains three suits.
Today some families rent the entire house for their gatherings.
The
Stages remodeled and redecorated the home after they took ownership.
They knew from the beginning it would be a B&B.
“The
day we closed on the house we had guests here. This is pretty much my
life now,” states Mrs. Stage. “The main reason we did the bed and
breakfast was so I could stay home and be with my children. It’s been
a wonderful environment for the kids with the people they’ve med and
living on the lake.”
“It’s
Rose’s business,” says her husband. “She works morning to night for
about 100 days.”
Mr.
Stage’s parents have been quite helpful with the ongoing work needed
to keep up such a large piece of real estate. His father, Delos,
helps with the repairs and Donna, his mother, helps with interior
decorating.
“It’s a
lot like the family farm where the whole family helps,” puts in her
husband.
The
mammoth house consists of 10 bedrooms and three fireplaces. The main
living room has a baby grand piano, which pianist Jared Caruso
frequently plays during breakfast in the summer.
The
couple has hosted a few celebrities such a supermodel Kim Alexis and
husband, Ron Duggee, a New York Rangers hockey player. Peter of the
folk group Peter, Paul, and Mary did not stay on the property, but did
take a ride on the family’s 32 food Marinette.
They
have catered several fundraisers, including one for Mario Cuomo, Jess
Present, Stan Lundine, and Mark Thomas.
The
Country Brunch serves 12-15 and is a favorite for large groups. The
businesswomen acquired the Blueberry Buckle recipe after her neighbor
served it for dessert. She then began to offer it for breakfast.
Mrs.
Stage serves the Caramel Apple Breakfast Pudding with quiche. “It is
a big hit with young and old.”
Her
late sister, Joelle, gave her the quiche recipe, which she says her
husband can make. She likes to use mini muffin tins for the Cinnamon
Butter Puffs, which are “great for small children.”
She
serves the Breakfast Casserole Omelet with the Orange Oatmeal Pie.
The
Scones, Mexican Eggs, Mexican Potatoes, Cheese Hash Browns, Stuffed
French Toast and Apple Pie Pancakes were contributed by Mr. Royal.
